Ingredients
Chicken:
- 2 pounds chicken thighs, bone-in and skin-on
Marinade:
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/2 cup water
- 1/4 cup rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Garnish:
- 2 green onions, sliced
- Sesame seeds for garnish (optional)
Instructions
- Prepare Marinade: In a large bowl, whisk together soy sauce, brown sugar, water, rice vinegar, garlic, ginger, black pepper, and red pepper flakes until the sugar is dissolved.
- Marinate Chicken: Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for the best flavor.
- Preheat Oven: Preheat the oven to 375°F (190°C).
- Bake Chicken: Place the marinated chicken thighs in a baking dish, pouring the marinade over the top. Bake for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Broil for Caramelization: For extra caramelization, switch the oven to broil for the last 5 minutes of cooking, watching closely to prevent burning.
- Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with sliced green onions and sesame seeds if desired.
Notes
- For a sweeter flavor, add a tablespoon of pineapple juice to the marinade.
- Serve the chicken over steamed rice or quinoa to soak up the delicious sauce.
