Description

Ground Beef Fried Rice is a quick, flavorful, and versatile dish that combines savory ground beef, mixed vegetables, and fluffy rice. Perfect for busy weeknights, this one-pan meal comes together in just 25 minutes and is a great way to use up leftover rice. With its balance of protein, veggies, and seasoning, it’s a satisfying and customizable meal everyone will enjoy.

Ingredients

2 cups cooked rice (preferably day-old for better texture)

1 pound ground beef (lean for a healthier option)

2 tablespoons soy sauce (adjust based on your taste preference)

1 tablespoon vegetable oil (for cooking)

1 cup mixed vegetables (peas, carrots, and corn work great)

2 large eggs, beaten

2 green onions, chopped (for garnish)

Salt and pepper, to taste

Instructions

  1. Cook the Ground Beef: Heat the vegetable oil in a large pan or wok over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 5–7 minutes.
  2. Add Vegetables: Stir in the mixed vegetables and cook for an additional 3–4 minutes, until heated through.
  3. Scramble the Eggs: Push the beef and vegetables to one side of the pan. Pour the beaten eggs into the empty side and scramble until fully cooked, about 1–2 minutes.
  4. Combine Ingredients: Add the cooked rice to the pan, breaking up any clumps. Pour in the soy sauce and stir everything together until well combined. Season with salt and pepper to taste.
  5. Garnish and Serve: Sprinkle the chopped green onions over the top and serve hot.

Notes

  • Vegetable Add-ins: Enhance the dish by adding bell peppers, broccoli, or spinach for added nutrition and color.
  • Spicy Kick: Incorporate a dash of sriracha or chili garlic sauce for some heat.
  • Low-Carb Option: Substitute the rice with cauliflower rice for a lower-carb version of this dish.
