Description

These Grilled Shrimp and Pineapple Skewers with Chili Glaze combine the sweet and savory flavors of grilled shrimp, caramelized pineapple, and a tangy chili glaze. Perfect for summer BBQs or family gatherings, these skewers are an easy, gluten-free dish with minimal ingredients and quick grilling time, sure to be a crowd-pleaser.

Ingredients

1 pound large shrimp, peeled and deveined

1 fresh pineapple, cut into chunks

2 tablespoons olive oil

2 tablespoons chili paste (adjust to taste)

1 tablespoon honey

2 cloves garlic, minced

2 tablespoons lime juice, freshly squeezed

1 teaspoon salt

1/2 teaspoon pepper

68 skewers (if using wooden skewers, soak in water for 30 minutes prior to use)

Instructions

  1. Prepare the Marinade:
  2. In a medium bowl, combine the olive oil, chili paste, honey, minced garlic, lime juice, salt, and pepper. Whisk until well blended to create the marinade.
  3. Marinate the Shrimp:
  4. Add the shrimp to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes.
  5. Prepare the Pineapple:
  6. While the shrimp is marinating, cut the pineapple into bite-sized chunks.
  7. Grill the Skewers:
  8. Preheat your grill to medium-high heat. Thread the marinated shrimp and pineapple chunks onto the skewers, alternating between shrimp and pineapple.
  9. Grill the skewers for 2-3 minutes on each side until the shrimp are opaque and cooked through, and the pineapple has grill marks.
  10. Serve:
  11. Remove from the grill and serve the skewers hot.

Notes

  • Don’t over-marinate the shrimp, as it can make them mushy.
  • Ensure your grill is hot enough before placing the skewers to get the best sear.
  • Avoid overcrowding the skewers to ensure even cooking.
  • Soak wooden skewers in water for 30 minutes before use to prevent burning.
  • Use fresh pineapple for the best flavor and texture; canned pineapple can be mushy.
  • Optional Add-ins: You can add bell peppers or red onions for extra flavor and color.
