Description

Ingredients

2 bunches broccolini, trimmed

2 tablespoons olive oil

Salt and pepper, to taste

1/3 cup shaved parmigiano reggiano

1/4 cup fresh basil, torn or chopped

1/2 teaspoon red pepper flakes

Lemon Vinaigrette:

3 tablespoons olive oil

2 tablespoons lemon juice

1 tablespoon apple cider vinegar

1/2 teaspoon garlic powder (or 1 small garlic clove, minced)

Salt and pepper, to taste


Instructions

  1. Prepare vinaigrette by whisking olive oil, lemon juice, vinegar, garlic, salt, and pepper. Set aside.
  2. Toss trimmed broccolini with olive oil, salt, and pepper.
  3. Heat a grill or grill pan over medium-high. Cook broccolini for 6–10 minutes, turning occasionally, until lightly charred but tender-crisp.
  4. Transfer to a serving platter. Drizzle with vinaigrette, then sprinkle with parmesan, basil, and red pepper flakes.
  5. Toss gently, taste for seasoning, and serve warm or chilled.

Notes

  • Roast broccolini at 400°F for 15–20 minutes if no grill is available.
  • Pan-fry for a stovetop version.
  • Swap parmesan with pecorino, asiago, or feta.
