Ingredients
1 cup crumbled feta cheese
½ cup green olives, pitted and halved (reserve a few for garnish)
¼ cup extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano
½ teaspoon black pepper
1 small garlic clove, minced
1 tablespoon chopped fresh parsley (optional)
Toasted bread, pita chips, or fresh veggies for serving

In a food processor, combine feta cheese, garlic, lemon juice, and half of the olive oil. Blend until smooth and creamy. If too thick, add more olive oil or a splash of water.
