Ingredients
1 cup fresh basil leaves
1 cup fresh parsley leaves
2 cups fresh spinach
4 cups low-sodium vegetable broth
1 cup full-fat coconut milk
4 cloves garlic, minced
2 tablespoons olive oil
Instructions

Prep the herbs: Wash and dry the basil, parsley, and spinach.

Sauté garlic: Heat olive oil in a large pot over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
