Description

Greek Yogurt Coffee Cake is ultra-moist, tender, and topped with a sweet cinnamon crumb layer. Perfect for breakfast, brunch, or dessert, this easy recipe uses simple ingredients and bakes beautifully in a 9×13 pan.

Ingredients

For the crumb topping:

1 ½ cups all-purpose flour

1 cup packed light brown sugar

1 tbsp cocoa powder

2 tsp ground cinnamon

½ tsp kosher salt

12 tbsp cold butter, cubed

For the cake:

3 cups all-purpose flour

2 tsp baking powder

½ tsp kosher salt

¼ tsp baking soda

1 cup unsalted butter, melted and slightly cooled

1 ½ cups granulated sugar

3 large eggs

1 tbsp vanilla extract

1 ½ cups plain Greek yogurt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

  2. Make crumb topping: Mix flour, brown sugar, cocoa, cinnamon, and salt. Cut in butter until coarse crumbs form. Set aside.

  3. Prepare cake batter: Whisk flour, baking powder, salt, and baking soda.

  4. In a large bowl, whisk melted butter and sugar. Add eggs and vanilla.

  5. Mix in half the dry ingredients, then yogurt, then remaining dry ingredients.

  6. Spread half the batter in the pan, sprinkle with half the crumb topping.

  7. Add remaining batter and top with remaining crumbs.

  8. Bake 45–50 minutes, until a toothpick comes out clean. Cool before slicing.
