Greek Yogurt Coffee Cake is ultra-moist, tender, and topped with a sweet cinnamon crumb layer. Perfect for breakfast, brunch, or dessert, this easy recipe uses simple ingredients and bakes beautifully in a 9×13 pan.
Ingredients
For the crumb topping:
1 ½ cups all-purpose flour
1 cup packed light brown sugar
1 tbsp cocoa powder
2 tsp ground cinnamon
½ tsp kosher salt
12 tbsp cold butter, cubed
For the cake:
3 cups all-purpose flour
2 tsp baking powder
½ tsp kosher salt
¼ tsp baking soda
1 cup unsalted butter, melted and slightly cooled
1 ½ cups granulated sugar
3 large eggs
1 tbsp vanilla extract
1 ½ cups plain Greek yogurt
Instructions
- 
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

Make crumb topping: Mix flour, brown sugar, cocoa, cinnamon, and salt. Cut in butter until coarse crumbs form. Set aside.

Prepare cake batter: Whisk flour, baking powder, salt, and baking soda.

In a large bowl, whisk melted butter and sugar. Add eggs and vanilla.
 - 
Mix in half the dry ingredients, then yogurt, then remaining dry ingredients.
 - 
Spread half the batter in the pan, sprinkle with half the crumb topping.
 - 
Add remaining batter and top with remaining crumbs.
 - 
Bake 45–50 minutes, until a toothpick comes out clean. Cool before slicing.
