Ingredients
3 lbs potatoes (any type, but starchy potatoes like Russets work best)
¾ cup olive oil
5 cloves garlic, peeled and pressed
2 lemons, juiced
¾ cup vegetable broth
2 tsp dried oregano
1 tsp poultry seasoning
⅓ cup fresh parsley for garnish (optional)
Salt and pepper to taste
Instructions
- Preheat the Oven: Preheat your oven to 390°F (200°C) or 160°C fan/gas mark 4. Grease a 6-hole muffin pan with 1 teaspoon of butter or cooking spray and set aside.
- Prepare the Potatoes: Peel the potatoes and cut them into wedges.
- Make the Broth: In a bowl, combine lemon juice, olive oil, garlic, poultry seasoning, vegetable broth, and oregano. Season with a pinch of salt and pepper. Whisk until well combined.
- Coat the Potatoes: Place the potato wedges in a baking dish. Pour the broth mixture over the potatoes and toss to coat evenly.
- Bake the Potatoes: Bake in the oven for 40 minutes. After 40 minutes, flip the potatoes to ensure even cooking. Return to the oven and bake for an additional 40 minutes, or until golden and crispy on the outside.
- Serve: Garnish with fresh parsley and serve warm.
