Ingredients

Dry Ingredients:

  • 1 cup gluten-free all purpose flour
  • 1 cup yellow cornmeal
  • 1 tablespoon baking powder
  • Pinch salt

Wet Ingredients:

  • ½ cup honey
  • ¾ cup milk (or vegan milk)
  • 6 tbsp butter (melted)
  • 2 eggs (lightly beaten)

Instructions

  1. Preheat: Preheat the oven to 375 degrees F (200 degrees C). Lightly grease a 9×9 inch baking pan.
  2. Mix Dry Ingredients: In a large bowl, stir together the flour, cornmeal, salt, and baking powder.
  3. Combine Wet Ingredients: Make a well in the center of the dry ingredients. Add the butter and honey, then add milk and eggs; stir to combine.
  4. Bake: Pour the batter into prepared baking pan. Bake for 20 minutes until a toothpick inserted into the center comes out clean.
  5. Serve: Let cool, then cut into squares. Serve with butter and honey.
