Maggie’s Ginger Scallion Sauce is a versatile and aromatic Chinese sauce that adds instant flavor to stir fries, noodles, rice, tofu, and dumplings. Ingredients
5.6 oz scallions (about 6 medium or 8 small)
1.4 oz ginger, minced (about 3 tbsp)
¾ tsp salt
½ tsp sugar
⅔ cup vegetable oil (or other neutral oil)
Instructions
- Step 1: Prepare the Aromatics
Slice scallions thinly. For thick scallions, halve them lengthwise before slicing into thin half-moons. Place in a medium heatproof bowl. Add minced ginger, salt, and sugar, and mix well. - Step 2: Heat the Oil
In a small pot or skillet, heat oil over medium heat until hot but not smoking. Test by dipping a wooden chopstick—the formation of small bubbles indicates the right temperature. - Step 3: Combine Oil and Aromatics
Immediately pour the hot oil over the scallion and ginger mixture. Stir thoroughly to release aroma and blend flavors. The sauce is now ready to use. - Step 4: Store (Optional)
Once cooled, transfer to a sealed container and store in the refrigerator for up to 2 weeks.
