Description

Garlic Parmesan Chicken Meatloaf is a lighter twist on a classic comfort dish, made with lean ground chicken, savory garlic, nutty Parmesan, and Italian herbs. Moist, tender, and flavorful, this wholesome version of meatloaf is perfect for family dinners and makes great leftovers for meal prep.

Ingredients

1 pound ground chicken

1/2 cup Parmesan cheese, grated

1/2 cup breadcrumbs (whole wheat or gluten-free if needed)

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1/4 cup milk

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Lightly grease a loaf pan.
  2. Mix Ingredients: In a large bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, garlic, egg, salt, pepper, Italian seasoning, and milk. Mix gently until just combined—do not overmix.
  3. Shape Loaf: Transfer mixture into the prepared loaf pan, shaping it into a smooth loaf.
  4. Bake: Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Rest & Serve: Let the meatloaf rest for 5 minutes before slicing and serving.

Notes

  • Cheesy Upgrade: Add shredded mozzarella or provolone inside for a gooey center.
  • Spicy Kick: Mix in red pepper flakes or hot sauce.
  • Veggie Boost: Add finely chopped spinach, zucchini, or mushrooms.
  • Glaze Option: Brush with marinara or ketchup before baking.
  • Herb Twist: Swap parsley for fresh basil or oregano.
