Chicken:

  • 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons Cajun seasoning, divided
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt, divided
  • ¼ teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons unsalted butter, divided

Sauce:

  • 1 tablespoon garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup (238 g) heavy cream
  • ¾ cup (189 g) chicken broth
  • 4 ounces cream cheese, softened
  • 1 cup (113 g) pepper jack cheese, shredded

Garnish:

  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Pasta: Boil a pot of salted water and cook rotini until al dente. Reserve pasta water, then drain and set aside.
  2. Prepare the Chicken: Toss chicken with Cajun seasoning, paprika, salt, and pepper. Cook in a skillet until golden brown and cooked through.
  3. Make the Sauce: In the same skillet, cook garlic, then add flour, Cajun seasoning, and salt to make a roux. Gradually add cream and broth, then mix in cream cheese and pepper jack until smooth.
  4. Combine and Serve: Toss cooked pasta in the sauce, add chicken, and garnish with parsley before serving.
