Chicken:

- ¼ teaspoon black pepper
- 2 tablespoons extra virgin olive oil
- 3 tablespoons unsalted butter, divided
Sauce:
- 1 tablespoon garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup (238 g) heavy cream
- ¾ cup (189 g) chicken broth
- 4 ounces cream cheese, softened
- 1 cup (113 g) pepper jack cheese, shredded

Instructions
- Cook the Pasta: Boil a pot of salted water and cook rotini until al dente. Reserve pasta water, then drain and set aside.
- Prepare the Chicken: Toss chicken with Cajun seasoning, paprika, salt, and pepper. Cook in a skillet until golden brown and cooked through.
- Make the Sauce: In the same skillet, cook garlic, then add flour, Cajun seasoning, and salt to make a roux. Gradually add cream and broth, then mix in cream cheese and pepper jack until smooth.
