Ingredients
Sweet Potato Mixture:
- 2.5 pounds sweet potatoes

- 1/4 tsp fresh ground nutmeg
Egg Whites Mixture:
- 2 large egg whites
- 3/4 cup pure maple syrup
- 1/2 lemon
Instructions
- Prepare Sweet Potatoes: Peel and cube sweet potatoes. Boil until fork-tender, then drain. Can be prepared ahead and refrigerated.
- Preheat Oven: Preheat to 375°F and butter a round baking dish.
- Make Sweet Potato Mixture: Blend sweet potatoes, cream, butter, egg yolks, salt, pepper, and nutmeg until smooth.
- Whip Egg Whites: Beat egg whites until stiff peaks form.
- Combine Mixtures: Gently fold egg whites into sweet potato mixture. Transfer to baking dish.
- Bake: Bake for 50-60 minutes until browned and set.
- Prepare Maple Syrup Sauce: Mix lemon juice with maple syrup and serve with the soufflé.
