Ingredients

1 pound baby potatoes (red or yellow), halved

8 ounces green beans, trimmed

Instructions

  1. Boil the Potatoes:
  2. In a large pot, add the halved baby potatoes and cover them with water.
  3. Bring to a boil and cook for about 15 minutes, or until the potatoes are fork-tender.
  4. Add Green Beans:
  5. When the potatoes are almost done, add the trimmed green beans to the same pot.
  6. Cook for an additional 3-5 minutes, or until the green beans are bright green and tender-crisp.
  7. Drain and Cool:
  8. Drain the potatoes and green beans in a colander.
  9. Rinse with cold water to stop the cooking process, then allow them to cool for a few minutes.
  10. Prepare the Vinaigrette:
  11. In a small bowl, whisk together olive oil, vinegar, Dijon mustard, salt, and pepper until emulsified and smooth.

  13. In a large mixing bowl, combine the cooled potatoes, green beans, and finely chopped shallot.
