Ingredients

Sweet Potatoes:

  • 4 lbs sweet potatoes, washed & cleaned

Seasoning:

  • 68 tablespoon butter
  • 1 teaspoon minced garlic
  • ¼ cup sour cream, room temperature
  • ¼ cup half & half, room temperature
  • Salt & pepper to taste

Instructions

  1. Prepare Sweet Potatoes: Peel and chop sweet potatoes into 2-inch pieces. Boil in salted water for 15-20 minutes until fork-tender.
  2. Mash Potatoes: Drain sweet potatoes and return to pot. Mash with butter, garlic, salt, pepper, sour cream, and half & half until creamy.
  3. Serve: Transfer to a serving bowl and top with additional butter, parsley, or thyme if desired.
