Fiesta Pinwheels are a delicious Mexican-inspired appetizer perfect for any gathering. These pinwheels feature a flavorful filling rolled up in tortillas and sliced into bite-sized pieces, making them a crowd-pleasing party snack.
Ingredients
For the Filling:
- 1 pound lean ground beef
 - 4-6 garlic cloves, minced (or 1 tsp garlic powder)
 - 1 1/2 tsp chili powder
 - 1 tsp ground cumin
 - 1/2 tsp smoked paprika
 - 1/2 tsp onion powder
 - 1/2 tsp salt
 - 1/2 tsp dried oregano
 - 1/4 tsp pepper
 - 8 oz. cream cheese, softened
 - 1/2 cup sour cream
 - 1/2 cup salsa
 - 1 cup shredded sharp cheddar cheese
 - 1/2 cup corn, rinsed and drained
 - 1/2 cup black beans, rinsed and drained
 - 1 can (4 oz.) chopped mild green chilies
 - 1 can (4 oz.) chopped jalapenos
 - 1/2 cup minced cilantro
 
For Serving:
- Guacamole
 - Salsa
 
Additional Items:
- 7 9-inch flour tortillas (or 6 10-inch tortillas)
 
Instructions
- Brown the Beef: In a skillet, cook the ground beef until almost cooked through. Add garlic and seasonings, then drain off any excess grease.
 - Prepare the Filling: In a bowl, mix cream cheese, salsa, and sour cream. Add remaining ingredients, including the cooked beef.
 - Assemble the Pinwheels: Spread filling on each tortilla, roll them up tightly, then sear them in a skillet.
 - Chill and Slice: Refrigerate the roll-ups for at least 3 hours, then slice into rounds before serving.
 
Notes
- You can use ground chicken or turkey as a substitute for beef.
 - For storage, keep the pinwheels covered in the refrigerator for up to 3 days. Serve fresh for best taste.
 - To freeze, flash freeze the pinwheels before storing in a freezer-safe container.
