Description

Ingredients

For the Filling:

  • 1 pound lean ground beef
  • 4-6 garlic cloves, minced (or 1 tsp garlic powder)
  • 1 1/2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp pepper
  • 8 oz. cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup corn, rinsed and drained
  • 1/2 cup black beans, rinsed and drained
  • 1 can (4 oz.) chopped mild green chilies
  • 1 can (4 oz.) chopped jalapenos
  • 1/2 cup minced cilantro

For Serving:

  • Guacamole
  • Salsa

Additional Items:

  • 7 9-inch flour tortillas (or 6 10-inch tortillas)

Instructions

  1. Brown the Beef: In a skillet, cook the ground beef until almost cooked through. Add garlic and seasonings, then drain off any excess grease.
  2. Prepare the Filling: In a bowl, mix cream cheese, salsa, and sour cream. Add remaining ingredients, including the cooked beef.
  3. Assemble the Pinwheels: Spread filling on each tortilla, roll them up tightly, then sear them in a skillet.
  4. Chill and Slice: Refrigerate the roll-ups for at least 3 hours, then slice into rounds before serving.

Notes

  • You can use ground chicken or turkey as a substitute for beef.
  • For storage, keep the pinwheels covered in the refrigerator for up to 3 days. Serve fresh for best taste.
