Instructions

In a saucepan, boil apple juice and water. Add chopped dried fruits and nuts, cook for 8–10 minutes until liquid is absorbed. Cool.

Preheat oven to 160°C (320°F) and line a 9-inch round cake tin.

In a large bowl, whisk butter and brown sugar until light. Add oil and curd, whisk until airy.

Sieve flour, almond powder, baking soda, baking powder, salt, nutmeg, and cinnamon into wet mixture.

Fold gently until combined, then add cooled fruit mixture.

Pour batter into prepared tin, top with cashews and tutti frutti.

Bake 50–60 minutes or until a toothpick comes out clean.

Cool for 1 hour before slicing.
