Ingredients
For the Roll-Ups:
1 can (8 oz) refrigerated crescent roll dough
8 breakfast sausage links
4 large eggs
½ cup shredded cheddar cheese
Salt and pepper, to taste

Reserved egg mixture (about 2 tablespoons)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cook the Sausage: In a skillet over medium heat, cook the sausage links until browned and fully cooked. Remove from the skillet, drain on paper towels, and set aside.
- Scramble the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. In the same skillet, add a small amount of butter or oil if needed, then pour in the eggs. Cook, stirring gently, until the eggs are just set and fluffy. Remove from heat.
- Prepare the Crescent Dough: Unroll the crescent dough and separate it into 8 triangles. Place half a slice of cheddar cheese on each triangle.
- Assemble the Roll-Ups: Spoon a portion of scrambled eggs onto each triangle, then place a sausage link on top. Roll up each triangle from the wide end to the narrow end, tucking in the sides slightly to seal.
- Brush with Egg: Lightly brush the tops of each roll-up with the reserved egg mixture.
- Bake: Place the roll-ups seam-side down on the prepared baking sheet. Bake for 15 to 18 minutes, or until golden brown and the cheese is melted.
