Description

This simple yet elegant Tomato Tart is made with fresh heritage tomatoes, sweet onion jam, and crispy puff pastry, creating the perfect rustic dish for any time of day or night. The combination of sweet and savory flavors from the tomatoes and onion jam is elevated by the flaky, golden puff pastry.


Ingredients

1 sheet all-butter puff pastry

¼ to cup onion jam

1 lb mixed heritage tomatoes, various varieties

1 egg, beaten

1 tablespoon mixed seeds (poppy, onion, fennel seeds)

Thyme leaves, picked from 1 bunch

Basil leaves, chopped from ½ bunch

Optional: Burrata or mozzarella cheese, honey for drizzling, truffle oil


Instructions

  1. 1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. 2. Prepare the Pastry: Place the puff pastry sheet on a baking paper-lined tray. Spread the onion jam onto the pastry, leaving a 2-inch border around the edges.
  3. 3. Slice the Tomatoes: Thinly slice the tomatoes and arrange them on top of the jam, still respecting the 2-inch border. Sprinkle the tomatoes generously with sea salt to enhance their natural sweetness.
  4. 4. Fold the Pastry Edges: Use a pastry brush to coat the edges of the pastry with the beaten egg. Fold the edges of the pastry over the tomatoes, creating a rustic border.
  5. 5. Add the Finishing Touches: Brush the folded pastry edges with more beaten egg and sprinkle with mixed seeds. Scatter the thyme leaves evenly over the tart.
  6. 6. Bake: Bake the tart in the preheated oven for about 35 minutes, or until the pastry is golden brown and crispy.
  7. 7. Serve: Once the tart is baked, remove it from the oven and let it cool slightly. Garnish with chopped basil leaves and, if desired, top with burrata or mozzarella cheese. A drizzle of honey or a few drops of truffle oil can also elevate the flavors.
