Description

Ingredients

1 cup white rice (rinsed and drained)

23 cups fresh baby spinach

2 tomatoes (diced)

1 medium onion (diced)

23 cloves garlic (minced)

1 cup pinto or black beans (canned, rinsed, and drained)

2 cups chicken stock (low sodium) or vegetable stock (or water if vegan)

1 ½ teaspoon curry powder

1 teaspoon cooking oil

Salt and pepper to taste

Optional Garnishes:

12 tablespoons fresh chopped cilantro

1 lime, sliced


Instructions

  1. Sauté the Aromatics:
  2. Heat oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Add the diced onion and sauté for 2-3 minutes until translucent.
  4. Stir in the diced tomatoes and cook for 3-4 minutes until they soften.
  5. Cook the Rice and Spinach:
  6. Add the spinach and rice to the skillet. Stir to combine, cooking until the spinach begins to wilt.
  7. Add Beans and Stock:
  8. Stir in the cooked beans and chicken or vegetable stock. Mix well and bring the mixture to a boil.
  9. Season the Dish:
  10. Season with curry powder, salt, and pepper. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender.
  11. Garnish and Serve:
  12. Garnish with fresh cilantro, spinach leaves, and lime slices. Serve warm and enjoy!

  • Cooking Tip: Once the mixture comes to a boil, reduce the heat to low and cover the skillet to avoid burning the rice.
