Ingredients
Gingerbread Pudding:
- 2 and 1/2 cups whole milk
- 1/2 cup heavy whipping cream
- 2/3 cup light brown sugar
- 4 Tbsp cornstarch
- 1 and 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/4 teaspoon salt
- 4 large egg yolks
- 1/4 cup unsulphured molasses
- 3 tablespoons unsalted butter, cut into pieces
- 1 tsp pure vanilla extract
Eggnog Whipped Cream:
- 1/2 cup heavy whipping cream, chilled
- 2 Tbsp Eggnog, chilled
- 1/3 cup powdered sugar
Optional Topping:
- Crushed gingersnap cookies
Instructions
- For the Gingerbread Pudding: Add milk and cream to a saucepan, heat until simmering. Mix dry ingredients in a bowl. Whisk in egg yolks and molasses. Slowly combine with hot milk. Cook until thickened. Add butter and vanilla. Chill.
- For the Eggnog Whipped Cream: Whip cream, eggnog, powdered sugar, and rum extract until soft peaks form.
