Description

Easy Crustless Tomato Pie is a light, healthy dish that highlights the sweet, juicy flavor of ripe tomatoes. With just a few ingredients and minimal prep, it’s the perfect summer recipe—delicious warm or at room temperature, as a main or a side.

Ingredients

3 large ripe tomatoes, sliced 1/4-inch thick

1 teaspoon salt, divided

½ teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a pie dish.

  2. Arrange tomato slices in the dish, slightly overlapping.

  3. Sprinkle half the salt and all of the pepper over the first layer.

  4. Add another layer of tomatoes and season with remaining salt.

  5. Bake for about 30 minutes until the tomatoes are tender and juices are reduced.

  6. Let cool slightly and serve warm or at room temperature.

Notes

  • Add cheese like mozzarella, Parmesan, or feta before baking for extra flavor.
  • Fresh herbs such as basil, oregano, or thyme complement the tomatoes beautifully.
  • Layer in veggies like caramelized onions or sautéed spinach for heartiness.
  • Spice it up with red pepper flakes or hot sauce.
  • Add a Mediterranean twist with olives and a drizzle of olive oil.
