Description
This Easy Cranberry Pistachio Cheese Log is a delightful appetizer that’s perfect for holiday gatherings or any special occasion. Creamy goat cheese is combined with cream cheese, honey, and a blend of spices, then coated with a flavorful mixture of fresh cranberries and pistachios. Serve with crackers for a deliciously festive treat.
Ingredients
Cranberry Pistachio Coating:
- 1 1/4 cups fresh cranberries
 - 1 cup shelled roasted, salted pistachios
 
Cheese Log:
- 7-8 oz. goat cheese log or tub
 - 4 oz. cream cheese, softened
 - 2 tablespoons honey
 - 1/4 tsp ground ginger
 - 1/4 tsp ground cinnamon
 - 1/4 tsp salt
 - 1/4 tsp dried thyme
 - 1/4 tsp dried rosemary
 - 1/8 tsp pepper
 - 1/2 cup Cranberry Pistachio Coating mixture (in directions)
 
Garnish:
- honey
 
Instructions
- Cranberry Pistachio Coating: Add cranberries and pistachios to a food processor and chop into small pieces. Reserve 1/2 cup and combine with remaining Cheese Log ingredients in a bowl.
 - Cheese Log: Shape the cheese mixture into a log, wrap in plastic, and freeze for 20-30 minutes. Spread Coating ingredients on parchment paper, roll the log in the mixture, and refrigerate until ready to serve.
 - When ready to serve, let the log soften, drizzle with honey, and enjoy with crackers.
