Description

This Easy Cranberry Pistachio Cheese Log is a delightful appetizer that’s perfect for holiday gatherings or any special occasion. Creamy goat cheese is combined with cream cheese, honey, and a blend of spices, then coated with a flavorful mixture of fresh cranberries and pistachios. Serve with crackers for a deliciously festive treat.


Ingredients

Cranberry Pistachio Coating:

  • 1 1/4 cups fresh cranberries
  • 1 cup shelled roasted, salted pistachios

Cheese Log:

  • 7-8 oz. goat cheese log or tub
  • 4 oz. cream cheese, softened
  • 2 tablespoons honey
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/8 tsp pepper
  • 1/2 cup Cranberry Pistachio Coating mixture (in directions)

Garnish:

  • honey

Instructions

  1. Cranberry Pistachio Coating: Add cranberries and pistachios to a food processor and chop into small pieces. Reserve 1/2 cup and combine with remaining Cheese Log ingredients in a bowl.
  2. Cheese Log: Shape the cheese mixture into a log, wrap in plastic, and freeze for 20-30 minutes. Spread Coating ingredients on parchment paper, roll the log in the mixture, and refrigerate until ready to serve.
  3. When ready to serve, let the log soften, drizzle with honey, and enjoy with crackers.
