Ingredients
For the Chicken:
- 1 kg (2.2 pounds) boneless, skinless chicken thighs
- ½ teaspoon tomato paste
- 1 tablespoon olive oil + extra for sautéing
For the Marinade:
- ½ teaspoon ground allspice
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- 1 teaspoon sweet paprika
- ⅓ teaspoon ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 2 tablespoons olive oil
To Sprinkle On Top:
- 1 teaspoon dried oregano
- ½ teaspoon dried marjoram
- 2–3 tablespoons fresh lemon juice
To Serve With/Make Wraps:
- 6 Pita flatbreads
- Tzatziki
- Tomato and onion slices
- Fresh chopped parsley
Instructions
- Cut the chicken meat into strips: Cut the chicken into strips and place in a mixing bowl.
- Marinate the meat: Combine all marinade ingredients, season, and mix well. Marinate for 30 minutes.
- Cook the chicken: Sear the chicken in a hot skillet until browned. Add tomato paste mixture and cook until juices evaporate.
- Finish and rest: Transfer chicken to a dish, sprinkle with herbs, and lemon juice. Rest covered for 20 minutes.
- Serve: Serve warm in pita bread with desired toppings.
