This classic Turkey and Rice Casserole is the perfect balance of flavor and comfort. The combination of cooked turkey, rice, and vegetables is baked to perfection in a creamy sauce that will have everyone coming back for seconds. Plus, it’s fully customizable—add cheese, your favorite herbs, or a sprinkle of paprika for added flavor. Whether you’re feeding a crowd or saving leftovers for later, this easy casserole is your go-to one-dish meal.

Ingredients

2 cups cooked turkey

1 cup uncooked white or brown rice

2 cups chicken or turkey broth

1 cup cream of mushroom soup

1 cup frozen mixed vegetables

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: Paprika, shredded cheddar cheese, fresh herbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix Ingredients: In a large mixing bowl, combine the cooked turkey, uncooked rice, chicken broth, cream of mushroom soup, and frozen vegetables. Stir until well-mixed.
  3. Season the Casserole: Add garlic powder, onion powder, salt, and pepper, then stir again to evenly distribute the seasonings.
  4. Transfer to Baking Dish: Pour the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  5. Cover and Bake: Cover the dish with aluminum foil to prevent drying out. Bake for 45 minutes.
  6. Uncover and Finish Baking: After 45 minutes, remove the foil and bake for an additional 15-20 minutes until the rice is tender and the casserole is bubbly.
  7. Cool and Serve: Let the casserole cool for a few minutes before serving.

Notes

  • Add Cheese: For extra creaminess, top the casserole with shredded cheddar cheese or your favorite cheese during the last 10 minutes of baking.
  • Switch Up Vegetables: Feel free to swap frozen mixed vegetables with peas, carrots, or even spinach for a different flavor.
  • Spice it Up: Add cayenne pepper or red pepper flakes for a spicy kick.
