Ingredients

Cookies:

  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg, at room temperature

  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder

Pumpkin Pie Filling:

  • 3 oz cream cheese, softened
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream, cold
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream the butter and sugars: In a mixing bowl, cream together the butter, oil, granulated sugar, and powdered sugar.
  3. Add egg and vanilla: Mix in the egg and vanilla extract until combined.
  4. Combine dry ingredients: Add the flour, salt, and baking powder, and mix until combined.
  5. Shape the cookies: Scoop out 9 cookie balls onto the baking sheet, flatten them, and create an indentation in the center.
  6. Bake: Bake the cookies for 8-9 minutes, then cool.
  7. Prepare pumpkin pie filling: Cream the cream cheese and brown sugar, mix in the pumpkin puree, pumpkin spice, and food coloring.
  8. Whip cream: In a separate bowl, whip the cold cream, sugar, and vanilla until stiff peaks form.
