Ingredients
Cookies:
- 1/2 cup butter, softened
- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg, at room temperature
- 1 tsp vanilla extract
- 2 & 1/3 cups flour
- 1/4 tsp salt
- 1 tsp baking powder
Pecan Pie Filling:
- 5 tbsp butter
- 2/3 cup brown sugar
- 1 & 1/4 cups chopped pecans
- 1 tsp vanilla extract
- 1/3 cup heavy cream
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter and sugars: In a large mixing bowl or stand mixer, cream the butter, oil, granulated sugar, and powdered sugar until smooth.
- Add wet ingredients: Mix in the egg and vanilla extract until well combined.
- Incorporate dry ingredients: Stir in the flour, salt, and baking powder until a dough forms. Shape the dough into 9 balls, flatten them, and create a well in the center for the filling.
- Bake the cookies: Bake for 8-9 minutes until set, then cool on the baking sheet.
- Make the pecan pie filling: In a saucepan, combine butter, brown sugar, and pecans, cooking until the mixture is bubbly. Add vanilla, cream, and spices, then spoon the filling onto the cookies.
- Cool and enjoy: Let the cookies cool for 20-30 minutes before serving.
