Ingredients

Cookies:

  • 2 & 1/3 cups flour

  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream the butter and sugars: In a large mixing bowl or stand mixer, cream the butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add wet ingredients: Mix in the egg and vanilla extract until well combined.
  4. Incorporate dry ingredients: Stir in the flour, salt, and baking powder until a dough forms. Shape the dough into 9 balls, flatten them, and create a well in the center for the filling.
  5. Bake the cookies: Bake for 8-9 minutes until set, then cool on the baking sheet.
  6. Make the pecan pie filling: In a saucepan, combine butter, brown sugar, and pecans, cooking until the mixture is bubbly. Add vanilla, cream, and spices, then spoon the filling onto the cookies.
