Ingredients
For the Soup:
- 1/2 medium yellow onion, diced (about 1/2 cup)
 - 1 cup grated carrots (2-3 medium carrots)
 - 3 celery sticks, sliced (about 1 cup)
 - 1 pound boneless, skinless chicken breasts
 - Salt & pepper, to taste
 - 4 cups low-sodium chicken broth
 - 1/2 tsp dried garlic powder
 - 1/2 tsp dried thyme
 - 1/2 tsp dried rosemary
 - 1 clove garlic, minced
 - 1 tbsp cornstarch (use 2 tbsp for thicker soup)
 - 1 (12-oz) can evaporated milk
 - 1 (17.5-oz) package gnocchi
 - 3 cups baby spinach
 
Instructions
- Place vegetables and chicken in slow cooker: Place diced onion, grated carrots, and sliced celery in the slow cooker. Season chicken with salt and pepper and place on top of the vegetables.
 - Add seasoned broth: Mix chicken broth, garlic powder, thyme, rosemary, and minced garlic. Pour over chicken and vegetables.
 - Slow cook: Cook on HIGH for 4-5 hours or LOW for 7-8 hours.
 - Shred chicken: Remove chicken, shred, and set aside.
 - Finish cooking: Whisk cornstarch into evaporated milk and add to the soup with gnocchi and shredded chicken. Cook for another 45 minutes on HIGH.
 - Add spinach and serve: Stir in baby spinach until wilted. Adjust seasoning and serve.
