Indulge in the rich and comforting flavors of a cheeseburger with this easy-to-make Crockpot Cheeseburger Soup. Packed with ground beef, veggies, and creamy cheese, this hearty soup is perfect for cozy nights in.
Ingredients
For the Soup:
- 1 lb. ground beef, browned and drained
 - 2 russet potatoes, diced
 - 2 carrots, peeled and diced
 - 3 celery ribs, peeled and diced
 - 1 white onion, diced
 - 1/2 tsp. salt
 - 1/4 tsp. pepper
 - 2 tsp dried basil
 - 1/2 tsp. garlic powder
 - 3 cups chicken broth
 
Additional Ingredients:
- 1 lb. Velveeta cheese, cubed
 - 8 oz. cream cheese, cubed
 
Instructions
- Add Ingredients: Combine cooked beef, potatoes, carrots, celery, onion, salt, pepper, basil, garlic powder, and chicken broth in the slow cooker. Do not add Velveeta cheese and cream cheese yet.
 - Cook: Cover and cook on LOW for 7 hours without opening the lid. (Can cook on HIGH for 3-4 hours until potatoes are tender).
 - Add Cheese: After 7 hours, add cubed Velveeta cheese and cream cheese to the soup. Stir gently to incorporate.
 - Finish Cooking: Cover and cook for an additional hour on low until cheeses are melted and blended. Stir well before serving.
 
Notes
- Store any leftover soup in an airtight container in the fridge for up to 3 days.
 - Reheat soup on the stovetop until warmed through for a delicious meal later.
