Ingredients
For the Beef Tips:
3 tablespoons avocado or canola oil (separated)
3 pounds chuck roast, cut into 1 ½-inch cubes
2 ½ teaspoons kosher salt
1 teaspoon black pepper
1 yellow onion, chopped
3 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1 bay leaf
½ teaspoon smoked paprika
1 (8-ounce) package sliced button mushrooms
2 tablespoons fresh chopped parsley (optional for garnish)
Serve over mashed potatoes, rice, or egg noodles
Instructions
-
Prepare the Beef: Pat the beef dry with a paper towel and cut it into 1 ½-inch cubes. Season with 1 teaspoon kosher salt and ½ teaspoon black pepper. Toss to coat.
-
Brown the Beef: Heat 2 tablespoons oil in a skillet or slow cooker on sauté mode. Brown the beef in batches for 2–3 minutes per side. Transfer the beef to a plate and set aside.
-
Cook the Onions and Garlic: In the same pot, add the chopped onions and cook for 4–5 minutes until softened. Add the minced garlic and cook for an additional 30 seconds.
-
Prepare the Gravy: Sprinkle 2 tablespoons of flour over the onions. Stir to coat. Slowly whisk in the beef broth, stirring well to combine. Add Worcestershire sauce, Dijon mustard, thyme, bay leaf, smoked paprika, and the remaining salt and pepper. Let the mixture simmer for 5–6 minutes until slightly thickened.
-
Cook in the Crockpot: Transfer the gravy mixture to the slow cooker. Add the browned beef and stir to coat. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is fork-tender.
-
Add the Mushrooms: Stir in the mushrooms during the last 60 minutes on LOW or 30 minutes on HIGH of cooking.
-
Finish and Serve: Remove the bay leaf, garnish with parsley if desired, and serve over mashed potatoes, rice, or egg noodles.
Notes
- Vegetarian Option: Replace the beef with mushrooms or lentils and vegetable broth for a rich, flavorful vegetarian dish.
- Spicy Kick: Add cayenne pepper or chili flakes to the gravy for a little heat.
- Different Cuts of Meat: Use sirloin or round steak in place of chuck roast for a leaner option, though chuck is preferred for its tenderness in slow cooking.
