Ingredients
2 slices sourdough (or artisanal bread of choice)
2 tbsp Barilla pesto
8 thin slices mozzarella cheese
For the Chicken Cutlet:
1 boneless chicken cutlet
1 egg, beaten
⅓ cup flour
⅓ cup breadcrumbs
½ tsp salt
½ tsp black pepper
Neutral cooking oil (for frying)
Optional: Mayonnaise or preferred dipping sauce
Instructions
- Prep the Chicken – Season chicken cutlet with salt and pepper. Dredge in flour, dip in egg, and coat with breadcrumbs.
- Cook the Chicken – Heat oil in a pan over medium heat. Fry the chicken for 4–5 minutes per side until golden and cooked through. Drain excess oil on paper towels.
- Assemble the Sandwich – Spread pesto on one slice of bread. Layer 4 slices of mozzarella, add crispy chicken cutlet, then 4 more slices of mozzarella. Top with the second slice of bread.
- Melt & Crisp – Bake or air fry at 375°F (190°C) for 8 minutes, until bread is golden and cheese is melted.
