Description

These Crispy Baked Parmesan Zucchini rounds are the perfect healthy side dish, packed with savory flavors and crispy texture. Ready in under 30 minutes, they’re gluten-free, easy to make, and perfect for meal prepping or satisfying cravings. The perfect balance of cheese and tender zucchini, with minimal oil and maximum flavor.

Ingredients

2 medium zucchinis, sliced into ¼-inch rounds

2 tablespoons olive oil

½ cup freshly grated Parmesan cheese

½ teaspoon garlic powder

½ teaspoon Italian seasoning

¼ teaspoon sea salt

¼ teaspoon black pepper

Optional: chopped parsley or lemon zest for garnish

Instructions

  1. Preheat and Prep: Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or spray lightly with olive oil. Slice zucchinis into ¼-inch rounds and pat dry.
  2. Season and Toss: Drizzle zucchini slices with olive oil and sprinkle with garlic powder, Italian seasoning, sea salt, and black pepper. Toss to coat. Add most of the Parmesan (save 2-3 tablespoons for later) and toss again to stick.
  3. Arrange on Baking Sheet: Place zucchini slices in a single layer on the prepared baking sheet. Sprinkle reserved Parmesan on top.
  4. Bake to Crispy Perfection: Bake for 18-22 minutes, flipping halfway through, until golden brown and crispy.
  5. Garnish and Serve: Allow to cool briefly, then garnish with parsley or lemon zest. Serve immediately while hot and crispy.

Notes

  • Zucchini Size: Slice zucchini evenly for consistent cooking.
  • Extra Crispiness: For a crunchier finish, bake a few extra minutes or add breadcrumbs to the cheese.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer to keep the crispiness.
