This Creamy Taco Soup is a quick and comforting 30-minute dinner packed with taco-seasoned beef, beans, corn, and cream cheese. Perfect for busy weeknights, it’s creamy, hearty, and full of flavor.
Ingredients
1 lb ground beef
1 onion, finely chopped
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained and rinsed
1 (10 oz) can tomatoes with green chilies, undrained
1 (4 oz) can green chilies, drained
1 (1 oz) package taco seasoning
32 oz beef broth
8 oz cream cheese, room temperature
1/4 cup heavy cream
Instructions

Brown Beef – In a large pot over medium heat, cook ground beef until browned. Drain excess grease.

Sauté Onion – Add chopped onion and cook 3–4 minutes until softened.

Add Canned Ingredients – Stir in beans, corn, green chilies, tomatoes with juices, taco seasoning, and beef broth. Simmer 10 minutes.

Blend Cream Cheese – In a heat-safe bowl, mix 2–3 ladles of soup broth with cream cheese. Blend until smooth, then stir back into soup.

Add Cream & Finish – Stir in heavy cream, cook on low 2–3 minutes until creamy and well blended.

Serve – Top with shredded cheddar, green onions, jalapeños, or tortilla chips.
