Ingredients
For the Sauce:
- 2 tbsp unsalted butter
 - 1 tbsp minced garlic
 - 2 tbsp flour
 - 1 cup hot milk
 - 1/2 tsp kosher salt
 - 1/4 cup + 1 tbsp pumpkin puree
 - 2 cups shredded sharp cheddar cheese
 
For the Potatoes:
- 3 large russet or Yukon Gold potatoes, cut into 1/8-inch slices
 
Instructions
- Preheat oven: Preheat the oven to 350 degrees. Grease a 1-quart oval baking dish.
 - Make the sauce: In a saucepan, melt butter, add garlic, whisk in flour, then slowly add warm milk and salt. Simmer until thickened. Season with salt and pepper. Whisk in pumpkin puree.
 - Layer potatoes: Arrange half of the potato slices in the baking dish. Season with salt and pepper, then spread half of the sauce and cheese. Repeat with remaining potatoes, sauce, and cheese.
 - Bake: Cover with foil and bake for 45 minutes or until potatoes are tender. Broil for a few minutes until cheese is golden brown.
