Ingredients
Chicken:
- 1 1/2 tablespoons olive oil
 - 1 1/4 pounds chicken cutlets or boneless skinless chicken breasts, cut in half lengthwise
 - 1 tablespoon chili powder
 - 1 teaspoon ground cumin
 - 1 teaspoon smoked paprika
 - 1/2 teaspoon garlic powder
 - Salt and freshly ground black pepper to taste
 
Corn Mixture:
- 1 cup diced white onion
 - 2 cups fresh corn or defrosted frozen corn
 - 4 oz can diced green chiles
 - 2 tablespoons chopped cilantro
 - 2 oz cream cheese, at room temperature
 - 1 cup whole milk, room temperature
 - 1/2 cup low sodium chicken broth
 
Additional:
- Crumbled cotija cheese
 
Instructions
- Season and Cook Chicken: Combine dried spices and season chicken. Sear in a skillet until golden brown. Set aside.
 - Sauté Vegetables: In the same skillet, sauté onion, corn, spices, green chiles, and cilantro until tender.
 - Make Creamy Sauce: Add cream cheese, chicken broth, and milk. Cook until sauce thickens.
 - Combine and Serve: Return chicken to the skillet, warm through. Top with cotija cheese and cilantro. Serve hot.

- For extra heat, add a pinch of cayenne pepper or a dash of hot sauce.
