Ingredients

1 medium head cauliflower (11.5 lbs), cut into florets

2 cups shredded sharp cheddar cheese

1 medium onion, chopped

3 cloves garlic, minced

4 cups low-sodium vegetable broth

1 cup whole milk or heavy cream

Salt and pepper, to taste


Instructions

  1. Prepare Cauliflower – Wash and cut the cauliflower into small florets.
  2. Sauté Aromatics – In a large pot over medium heat, sauté onion in olive oil until translucent. Add garlic and cook 1–2 minutes until fragrant.
  3. Cook Cauliflower – Add cauliflower florets and vegetable broth. Simmer 20 minutes, or until cauliflower is fork-tender.
  4. Blend – Puree the soup with an immersion blender or in batches in a countertop blender until smooth.
  5. Add Dairy & Cheese – Return soup to heat. Stir in milk or cream and shredded cheddar until melted and creamy.
  6. Season & Serve – Adjust seasoning with salt and pepper. Serve hot with crusty bread or fresh herbs.

Notes

  • For a richer soup, replace milk with heavy cream.
  • Vegan option: use cashew cream and nutritional yeast instead of cheddar.
