Ingredients
1 medium head cauliflower (1–1.5 lbs), cut into florets
2 cups shredded sharp cheddar cheese
1 medium onion, chopped
3 cloves garlic, minced
4 cups low-sodium vegetable broth
1 cup whole milk or heavy cream
Salt and pepper, to taste
Instructions
- Prepare Cauliflower – Wash and cut the cauliflower into small florets.
- Sauté Aromatics – In a large pot over medium heat, sauté onion in olive oil until translucent. Add garlic and cook 1–2 minutes until fragrant.
- Cook Cauliflower – Add cauliflower florets and vegetable broth. Simmer 20 minutes, or until cauliflower is fork-tender.
- Blend – Puree the soup with an immersion blender or in batches in a countertop blender until smooth.
- Add Dairy & Cheese – Return soup to heat. Stir in milk or cream and shredded cheddar until melted and creamy.
- Season & Serve – Adjust seasoning with salt and pepper. Serve hot with crusty bread or fresh herbs.

- For a richer soup, replace milk with heavy cream.
