16 oz sweet corn (frozen)
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon salt
4 oz pepperoncini (or substitute as noted below)
4 oz tomatoes, seeded and chopped (or substitute as noted below)
1/2 cup cheddar cheese
1/2 cup mozzarella cheese (part skimmed)
2 tablespoons cilantro, chopped (for garnish)
Instructions
-
Preheat the Oven: Preheat your oven to 350°F (180ºC) and grease an 8×8 inch baking dish. Set aside.
-
Prepare the Cream Cheese: In a large bowl, whip the cream cheese until smooth and creamy.
-
Add the Ingredients: To the whipped cream cheese, add sweet corn, onion powder, chili powder, salt, pepperoncini, chopped tomatoes, and cheddar cheese. Mix everything together until well combined.
-
Transfer to Baking Dish: Transfer the mixture to the prepared baking dish and spread evenly.
-
Bake: Place the baking dish in the preheated oven and bake for 30 minutes. During the last 5 minutes, sprinkle the mozzarella cheese on top and continue baking until the cheese is fully melted and bubbly.
-
Garnish and Serve: Remove from the oven and garnish with freshly chopped cilantro. Serve warm with your favorite dipping snacks like tortilla chips, crackers, or fresh veggies.
Notes
- Substitute the Peppers: If you don’t have pepperoncini, substitute with pickled jalapeños or a 10 oz can of diced tomatoes with chilies for added spice.
- Add More Veggies: Add chopped bell peppers, onions, or even spinach for extra nutrition and flavor.
- Cheese Swap: Experiment with different cheeses like cream cheese with chives, or use sharper cheddar for more flavor.
