Ingredients

For the Dip:

4 oz cream cheese

16 oz sweet corn (frozen)

1/2 teaspoon onion powder

1/2 teaspoon chili powder

1/2 teaspoon salt

4 oz pepperoncini (or substitute as noted below)

4 oz tomatoes, seeded and chopped (or substitute as noted below)

1/2 cup cheddar cheese

1/2 cup mozzarella cheese (part skimmed)

2 tablespoons cilantro, chopped (for garnish)


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (180ºC) and grease an 8×8 inch baking dish. Set aside.

  2. Prepare the Cream Cheese: In a large bowl, whip the cream cheese until smooth and creamy.

  3. Add the Ingredients: To the whipped cream cheese, add sweet corn, onion powder, chili powder, salt, pepperoncini, chopped tomatoes, and cheddar cheese. Mix everything together until well combined.

  4. Transfer to Baking Dish: Transfer the mixture to the prepared baking dish and spread evenly.

  5. Bake: Place the baking dish in the preheated oven and bake for 30 minutes. During the last 5 minutes, sprinkle the mozzarella cheese on top and continue baking until the cheese is fully melted and bubbly.

  6. Garnish and Serve: Remove from the oven and garnish with freshly chopped cilantro. Serve warm with your favorite dipping snacks like tortilla chips, crackers, or fresh veggies.
