Description

Cowboy Butter Chicken Linguine is a bold and comforting pasta dish that combines juicy, golden-seared chicken with linguine tossed in a zesty cowboy butter sauce. Made with garlic, herbs, lemon juice, Parmesan, and a touch of heat, this dish delivers creamy richness and fresh brightness all in just 30 minutes.

Ingredients

2 chicken breasts

12 oz linguine

6 tablespoons butter

4 cloves garlic, minced

1 teaspoon paprika

½ teaspoon red pepper flakes

2 tablespoons fresh parsley, chopped

1 tablespoon fresh chives, chopped

2 tablespoons lemon juice

½ cup Parmesan cheese, grated

Salt, to taste

Black pepper, to taste

Instructions

  1. Season chicken breasts with salt, black pepper, and paprika.

  2. In a large skillet, melt 2 tablespoons butter over medium-high heat. Sear chicken for 4–6 minutes per side, until golden and cooked through. Remove and set aside.

  3. Bring a large pot of salted water to a boil. Cook linguine until al dente. Reserve 1 cup pasta water, then drain.

  4. In the same skillet used for chicken, melt the remaining butter. Add garlic, paprika, and red pepper flakes. Cook for 1 minute until fragrant.

  5. Return chicken to the skillet. Add linguine, lemon juice, and a splash of pasta water. Toss to coat.

  6. Stir in parsley, chives, and Parmesan. Mix until pasta is well coated.

  7. Slice chicken and serve over the linguine. Garnish with extra herbs and Parmesan if desired.

Notes

  • Toss pasta with pasta water to help emulsify the buttery sauce.
  • For extra spice, add more red pepper flakes or cayenne.
  • Add veggies like spinach, mushrooms, or cherry tomatoes for variety.
  • Swap chicken for shrimp or salmon for a seafood twist.
  • Reheat gently with a splash of broth, lemon juice, or pasta water to keep sauce smooth.
