Description

These Courgette Tofu Fritters are a delicious and healthy snack or side dish that is easy to make and packed with flavor. The combination of tofu, courgette, and aromatic spices creates a tasty dish that is perfect for any occasion.


Ingredients

Main Ingredients:

  • 280g firm tofu*
  • 200g courgette, grated
  • 1/4 white onion, finely chopped
  • 2 garlic cloves, minced
  • 15g fresh parsley, finely chopped
  • 15g fresh coriander, finely chopped

Spices and Seasonings:

  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • 1/2 tsp garam masala
  • 1/4 tsp black pepper
  • 50g chickpea flour*

*You can use plain flour instead.


Instructions

  1. Squeeze out Excess Water: Use a clean muslin cloth to squeeze out as much water from the tofu and grated courgette. Add to a large mixing bowl.
  2. Mix Ingredients: Add all the remaining ingredients to the bowl and mix well. Use your hands to mash everything together until you have a mixture that holds when shaping.
  3. Shape and Fry: Shape the mixture into 7 patties. Fry in a pan with neutral oil over medium heat until golden brown and cooked through.

Notes

  • You can also bake the fritters in a preheated oven at 180C/160C fan for 25-30 minutes as an alternative to frying, though the texture may differ slightly.
