These Courgette Tofu Fritters are a delicious and healthy snack or side dish that is easy to make and packed with flavor. The combination of tofu, courgette, and aromatic spices creates a tasty dish that is perfect for any occasion.
Ingredients
Main Ingredients:
- 280g firm tofu*
- 200g courgette, grated
- 1/4 white onion, finely chopped
- 2 garlic cloves, minced
- 15g fresh parsley, finely chopped
- 15g fresh coriander, finely chopped
Spices and Seasonings:
- 1 tsp salt
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- 1/2 tsp garam masala
- 1/4 tsp black pepper
- 50g chickpea flour*
*You can use plain flour instead.
Instructions
- Squeeze out Excess Water: Use a clean muslin cloth to squeeze out as much water from the tofu and grated courgette. Add to a large mixing bowl.
- Mix Ingredients: Add all the remaining ingredients to the bowl and mix well. Use your hands to mash everything together until you have a mixture that holds when shaping.
- Shape and Fry: Shape the mixture into 7 patties. Fry in a pan with neutral oil over medium heat until golden brown and cooked through.
Notes
- You can also bake the fritters in a preheated oven at 180C/160C fan for 25-30 minutes as an alternative to frying, though the texture may differ slightly.
