Ingredients
Toast & Oil
- 2 slices sourdough bread
- 1 tsp olive oil
Toppings
- 1/2 cup cottage cheese
- 1 cup mixed sliced veggies (cucumber, tomato, scallions, radish)
- 1 tbsp chili crunch
- 1/4 tsp ground black pepper
- 1 pinch flaky sea salt
Instructions
- Prepare Vegetables: Thinly slice tomatoes, cucumbers, and radishes. Chop scallions or green onions finely to use as garnish.
- Prepare Bread: Cut the sourdough bread into approximately 1/2 inch thick slices ensuring they are sturdy enough to hold the toppings.
- Toast Bread: Heat a skillet over medium-high heat. Drizzle olive oil on one side of each bread slice and place the oiled side down in the hot skillet. Drizzle olive oil on the top side as well. Toast until golden brown on the bottom, then flip to toast the other side until golden.
- Prepare Cottage Cheese: Stir the cottage cheese to achieve an even consistency for easy spreading.
- Assemble Toast: Spread a thick layer of cottage cheese evenly over the toasted bread slices.
- Add Veggies and Seasoning: Top the cottage cheese layer with slices of cucumber, tomato, and radish. Season with flaky sea salt and ground black pepper to taste.
