Description

This Clementine Yogurt Olive Oil Cake combines the natural sweetness of clementines with the richness of olive oil and tangy Greek yogurt, resulting in a moist, tender cake with a refreshing citrus flavor. Perfect for any occasion, whether as a snack, dessert, or a morning treat with coffee or tea, this elegant cake will impress your guests with its light texture and aromatic appeal.

Ingredients

For the Cake:

1 cup granulated sugar

2 clementines or 1 orange

1½ cups all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

½ cup plain Greek yogurt

3 large eggs

2 teaspoons vanilla extract

¼ teaspoon orange extract

½ cup olive oil

Sanding sugar (optional)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Grease and line an 8.5×4.5-inch loaf pan with parchment paper.
  2. Prepare the Sugar Mixture: In a medium bowl, combine the granulated sugar and the zest of the clementines. Use your fingers to rub the zest into the sugar until it’s fragrant and slightly moist.
  3. Add Wet Ingredients: To the sugar mixture, whisk in the Greek yogurt until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and orange extracts.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add Olive Oil: Slowly drizzle in the olive oil, stirring gently until the batter is smooth and well combined.
  7. Bake: Pour the batter into the prepared loaf pan. If desired, sprinkle the top with sanding sugar for a decorative finish. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Glazed Version: For added sweetness and shine, brush the top of the cooled cake with a mixture of honey and clementine juice.
  • Nutty Addition: Fold in ½ cup of chopped almonds or pistachios into the batter for added texture and flavor.
  • Citrus Blend: Substitute clementines with mandarins or a combination of oranges and lemons for a different citrus profile.
