Ingredients
1 lb wild-caught shrimp, peeled and deveined
½ teaspoon salt
1 teaspoon smoked paprika
1 tablespoon olive oil
Lime zest (from 1 lime)
Juice of 1 lime
1 tablespoon honey
3 tablespoons chopped cilantro (plus more for garnish)
3 cups finely shredded green cabbage
½ cup Greek yogurt
8 tortillas (flour or corn)
Avocado, sliced (for topping)
Instructions
- Prepare the Shrimp Marinade:
In a medium bowl, combine salt, smoked paprika, olive oil, lime zest, lime juice, honey, and chopped cilantro. Mix well. - Marinate the Shrimp:
Add the peeled and deveined shrimp to the marinade. Let it sit for about 10 minutes to absorb the flavors. - Make the Slaw:
In another bowl, combine shredded cabbage, cilantro, Greek yogurt, and lime juice. Stir to combine until the slaw is creamy and evenly mixed. - Cook the Shrimp:
Heat a skillet over medium-high heat and add a little butter or oil. Cook the marinated shrimp for about 3–4 minutes on each side until they turn pink and opaque. - Warm the Tortillas:
While the shrimp is cooking, warm the tortillas in a separate pan or microwave until soft and pliable. - Assemble the Tacos:
Place a couple of spoonfuls of the creamy slaw onto each tortilla. Top with 3-4 shrimp, then add sliced avocado on top. - Serve:
Garnish with additional cilantro and serve immediately.
Notes
- Shrimp Alternatives: You can easily substitute the shrimp for grilled or sautéed chicken, fish, or even tofu for a vegetarian option.
- Dairy-Free Option: Swap Greek yogurt for dairy-free yogurt or sour cream for a dairy-free alternative.
- Make it Spicy: Add chili powder, cayenne pepper, or fresh chopped jalapeños to the marinade for a spicy kick.
- Make-Ahead: The slaw can be prepared a day ahead and stored in the refrigerator. You can also marinate the shrimp a few hours in advance.
- Extra Flavor: Add hot sauce, salsa, or pickled onions to add more depth of flavor to your tacos.
- Tortilla Options: While flour tortillas are commonly used, corn tortillas are a great gluten-free alternative.
