Description
Delightful Chili-Lime Shrimp Crostinis topped with caramelized pineapple guacamole and crumbled goat cheese, perfect as a flavorful appetizer or light entrée combining zesty shrimp with creamy guacamole on crisp toasted baguette slices.
Ingredients
Shrimp Marinade and Cooking
- 1 lb peeled and deveined medium shrimp, tails removed
 - 3 tbsp extra virgin olive oil, divided
 - 2 tbsp sweet chili sauce
 - 1/2 tsp Sriracha
 - Zest and juice of 1 lime
 - 2 tbsp chopped cilantro
 - 1 clove garlic, minced
 - Pinch of crushed red pepper flakes (optional)
 
Bread
- 1 French baguette, sliced into 10-12 pieces
 
Caramelized Pineapple Guacamole
- 2 ripe avocados, fruit scraped out
 - 1 cup diced pineapple
 - 1/4 cup red bell pepper, diced
 - 1/4 cup chopped cilantro
 - 1 lime, juiced
 - 1/4 tsp sea salt
 - 1/4 tsp black pepper
 
Garnish
- 2 tbsp goat cheese, crumbled
 
Instructions
- Prepare Shrimp Marinade: In a large bowl, combine 1 1/2 tbsp olive oil, sweet chili sauce, Sriracha, lime zest and juice, chopped cilantro, minced garlic, and crushed red pepper flakes if using. Whisk until well mixed. Add the shrimp and toss to coat evenly in marinade. Set aside to let flavors meld.
 - Caramelize Pineapple: Heat 1 tsp olive oil in a large skillet over medium heat. Once hot, add diced pineapple and cook for 8-10 minutes, turning two or three times to caramelize all sides evenly. Remove from heat and allow to cool slightly for further use in the guacamole.
 - Make Pineapple Guacamole: Scoop the avocado flesh into a large bowl and mash thoroughly with a fork. Stir in diced red bell pepper, chopped cilantro, lime juice, cooled caramelized pineapple, sea salt, and black pepper. Mix until well combined for a sweet and tangy guacamole.
 - Cook Shrimp: Return the same skillet to medium-high heat. When hot, add the marinated shrimp and cook for about 2 minutes per side until they are opaque and cooked through. Remove from heat.
 - Toast Baguette Slices: Preheat your oven broiler to high. Brush the bread slices evenly with the remaining 1 1/2 tbsp olive oil. Place on a baking sheet and broil for 1-2 minutes on each side until toasted and crisp. Keep a close eye on them to avoid burning.
 - Assemble Crostinis: Spread a generous layer of pineapple guacamole over each toasted bread slice. Top each with approximately three cooked shrimp. Sprinkle crumbled goat cheese evenly over the assembled crostinis for a creamy finish. Serve immediately and enjoy!

- Watch the broiling bread carefully as it toasts quickly and can burn.
