Ingredients

For the Bake:

2 cups shredded cooked chicken (rotisserie chicken works great)

3 medium zucchinis, sliced

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

½ cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil (for greasing the dish)

For Garnish:

Fresh basil, for garnish (optional)


Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. Mix Ingredients: In a large mixing bowl, combine the shredded chicken, sliced zucchini, halved cherry tomatoes, mozzarella cheese, cream cheese, garlic powder, Italian seasoning, salt, and pepper. Stir until well mixed.
  3. Assemble the Bake: Transfer the mixture into the prepared baking dish, spreading it evenly.
  4. Add Parmesan: Sprinkle the grated Parmesan cheese over the top.
  5. Bake: Place the dish in the preheated oven and bake for 25–30 minutes, or until the zucchini is tender and the cheese is melted and golden.
  6. Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Serve warm.
