Ingredients

1 tablespoon olive oil

2 garlic cloves, minced

1 yellow onion, diced

1 bell pepper, chopped

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 pound ground beef (or plant-based substitute)

2 cups tomato sauce (or marinara)

2 cups baby spinach

1 pound gnocchi (shelf-stable, refrigerated, or frozen)

1 1/2 cups shredded mozzarella

Salt and pepper, to taste

Fresh basil, to garnish


Instructions

  1. Preheat oven to 375°F (190°C). If using an oven-safe skillet, prepare directly in it; otherwise, transfer later to a baking dish.

  2. Heat olive oil in a skillet over medium heat. Add garlic, onion, and bell pepper. Sauté with paprika and chili powder for about 5 minutes, until softened and fragrant.

  3. Add ground beef and cook until browned, about 5–8 minutes. Season with salt and pepper.

  4. Stir in tomato sauce and spinach, cooking until spinach wilts.

  5. Remove from heat and stir in gnocchi, ensuring it is fully coated in sauce.

  6. If not using an oven-safe skillet, transfer mixture to a baking dish. Sprinkle mozzarella evenly on top.

  7. Bake uncovered for 20 minutes, until the cheese is melted and bubbling.

  8. Garnish with fresh basil before serving.

Notes

  • No need to pre-cook the gnocchi—it cooks in the sauce as it bakes.
  • Ground turkey, chicken, or beans can be swapped for beef.
  • Mozzarella can be replaced with cheddar, provolone, or a cheese blend.
