Ingredients
Dough:
- 2 cups all-purpose flour

Filling:
- 4 ripe pears, peeled, cored, and sliced
- 1/4 cup brown sugar

Crumble Topping:
- 1 cup rolled oats
- 1/2 cup chopped almonds
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
Instructions
- Make the pastry: In a large bowl, whisk together 2 cups flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
- Prepare the filling: In a bowl, combine sliced pears, 1/4 cup brown sugar, 2 tablespoons flour, chai spice, ginger, and cardamom. Toss to coat the pears evenly.
- Make the crumble topping: In a separate bowl, combine oats, almonds, 1/4 cup brown sugar, and melted butter. Mix until well combined.
- Roll out the chilled dough on a lightly floured surface into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and up the sides of the pan. Trim any excess dough.
- Pour the pear filling into the tart shell. Sprinkle the crumble topping evenly over the pears.
- Bake in a preheated oven at 375°F (190°C) for 40-50 minutes, or until the crust is golden brown and the filling is bubbling.
- Let the tart cool slightly before serving.
