Ingredients
Dry Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon cardamom
- 1/4 teaspoon cloves or allspice or pumpkin pie spice
- 1/4 teaspoon nutmeg (optional)
- 1/2 teaspoon salt
Wet Ingredients:
- 1/4 cup granulated sugar
- 3/4 cup light brown sugar, packed
- 1/2 cup unsalted butter, browned or melted and cooled
- 1 large egg
- 3/4 teaspoon vanilla extract
Additional Ingredients:
- 1 2/3 cups rolled oats (not quick-cooking oats)
- 3/4 cup raisins
Instructions
- Preheat the Oven: Preheat oven to 350°F. Prepare an 8×8 inch pan with nonstick spray and parchment paper.
- Prepare the Butter: Melt or brown the butter and set aside to cool slightly.
- Mix the Ingredients: In a bowl, combine the dry ingredients, then mix in the wet ingredients. Fold in the oats and raisins.
- Bake: Press the mixture into the pan and bake for 22-24 minutes until golden brown.
- Cool and Serve: Allow the bars to cool in the pan before cutting into squares.
