Description

This Carrot Cake Bread Loaf is a moist and flavorful twist on traditional carrot cake. Made with Greek yogurt and shredded carrots, it’s topped with a creamy frosting infused with orange zest. Ingredients

For the Bread:

1.5 cups all-purpose flour

2 tsp baking powder

¼ tsp salt

¾ cup plain Greek yogurt (2% recommended)

1 cup sugar

3 large eggs, whisked

1 tsp vanilla extract

½ cup coconut oil, melted

1 cup shredded carrots

¼ cup raisins

For the Cream Cheese Frosting:

½ brick (4 ounces) cream cheese

½ cup powdered sugar

1 orange, zested

Garnish:

Walnuts

Additional orange zest


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly spray a loaf pan or line it with parchment paper.
  2. In a large bowl, mix together the flour, baking powder, and salt.
  3. In another bowl, whisk the eggs, then add the Greek yogurt, sugar, vanilla extract, and melted coconut oil. Once combined, pour this mixture into the dry ingredients.
  4. Fold in the shredded carrots and raisins.
  5. Pour the batter into the prepared loaf pan and bake at 350°F (175°C) for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the bread is baking, prepare the frosting by heating the cream cheese for 30 seconds. Add powdered sugar and orange zest, mixing until smooth. Chill the frosting in the fridge.
  7. Once the bread is baked, cool it for 10 minutes before spreading the frosting on top. Garnish with chopped walnuts and additional orange zest.
