- 1/4 cup olive oil
- 1 tablespoon chili flakes (adjust based on preferred spice level)
- 1 garlic clove, minced
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt (for chili oil)
Garnish:
- Fresh parsley, chopped (optional, for garnish)
- Grated Parmesan cheese (optional, for garnish)
- Extra chili oil (optional, for garnish)
Instructions
- Cook Pasta: Boil pasta in salted water according to package instructions. Reserve ½ cup of pasta water before draining.
- Caramelize Onions: Heat olive oil and butter in a pan over medium-low heat. Add onions, sugar (if using), salt, and pepper. Cook for 20-25 minutes, stirring occasionally until golden brown and caramelized.
- Prepare Chilli Oil: In a small pan, heat olive oil over low heat. Add chili flakes, minced garlic, smoked paprika (if using), and salt. Stir for 1-2 minutes until fragrant, then remove from heat.
