Indulge in the rich, comforting flavors of Caramelized Banana Upside-Down Cake, where soft, caramelized bananas meet a fluffy, buttery cake. This easy-to-make dessert is a perfect way to use ripe bananas, creating a beautiful and delicious treat that’s ideal for family gatherings, brunches, or cozy evenings at home. A simple yet indulgent dessert that’s sure to impress!

Ingredients

4 ripe bananas

1/2 cup unsalted butter (divided)

1 cup dark brown sugar

1 1/2 cups all-purpose flour

2 tsp baking powder

3 large eggs (room temperature)

2 tsp pure vanilla extract

1/4 tsp salt

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking pan with butter to prevent the cake from sticking.
  2. Caramelize the Bananas: In a skillet, melt 1/4 cup of butter and add the dark brown sugar. Stir until it starts to bubble. Layer the sliced bananas in the skillet and cook for about 2 minutes on each side until golden and caramelized.
  3. Make the Cake Batter: In a large bowl, cream the remaining butter and dark brown sugar together until fluffy. Add the eggs one at a time, mixing well after each. Gradually sift in the flour, baking powder, and salt. Stir until just combined—don’t overmix.
  4. Assemble the Cake: Pour the batter over the caramelized bananas in the prepared pan, ensuring the bananas are covered evenly.
  5. Bake the Cake: Bake for 30-35 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Flip: Let the cake cool for 10 minutes. Once slightly cooled, flip the cake onto a serving plate. The caramelized bananas will be on top for a beautiful presentation.

Notes

  • Add Crunch: For extra crunch, mix in walnuts or pecans into the cake batter or sprinkle them over the caramelized bananas.
  • Spice It Up: Add a pinch of cinnamon or nutmeg to the batter for extra warmth and flavor.
  • Substitute Fruit: Try using apples or pears instead of bananas for a different take on the classic upside-down cake.
